All year round salads

Ideas to keep salads interesting throughout the year.

  • Salad is an alternative to hot vegetables and can be more versatile; raw vegetables are often more popular than cooked vegetables with pupils.
  • Salad bars are popular with both primary and secondary pupils, as they like to select their favourite combinations.
  • Make sure that salad is always fresh and try to use a variety of fruit and vegetables to add different colours (Adobe pdf doc 74KB).
  • Salad is often thought of as a summer option but can be enjoyed all year round.
    • Spring: Homemade coleslaw with spring green cabbage and carrots.
    • Summer: Lettuce is seasonal in summer as well as rocket and baby spinach.
    • Autumn: Add a kick to salads using spring onions or radishes, or include red or purple cabbage for colour.
    • Winter: Serve warm salads such as couscous or rice.
  • Make salads more interesting by adding different ingredients like chopped apple, orange segments, dried fruit, feta cheese, sun dried tomatoes, olives and tasty low fat dressings.
  • Add salad to sandwiches and wraps but make sure it is not too wet otherwise the bread can go soggy.
