Efficient Kitchens and Dining Spaces

The Efficient Kitchens and Dining Spaces project was set up to increase and improve meal service efficiency and the dining hall experience in schools. With the ultimate goal to increase and maintain school meal take up.

Project objectives:

  • To trial ideas in a few schools across England to help them improve their meal and dining hall experience.
  • To provide evidence that shows the impact of these changes on time, cost and quality

Methodology
Facilitators worked alongside a core school team to develop ideas on how to use time, energy and equipment efficiently, to reduce waste and increase the capacity of kitchens.

How were the schools chosen?
The School Food Trust engaged with a few Local Authorities that were asked to put forward schools that they felt fitted the criteria outlined below.

Schools had to meet the following criteria:

  • A sound food ethos – signed up to the Million Meals campaign (see www.schoolfoodtrust.org.uk/millionmeals)
  • Full engagement and commitment from Caterers and Catering team, Head teacher, Bursar and Governors.
  • A school team willing and able to provide extra time
  • High standards – be on target to meet Nutritional Standards.
